The Range

All Saints Estate premium varietal wines are hallmark regional varieties, expressing a true sense of place, with fruit carefully selected from the best blocks on the estate. They are made in the original winery deep inside the castle using handcrafted techniques including gentle basket pressing, open fermentation and finally, quiet aging in French and American oak.

The Wine

When crafting Merlot we aim for a soft medium bodied wine to showcase the soft plummy fruit character. The 2016 Merlot has a bright purple colour and aromas of ripe red berry fruit and some mocha oak notes. On the palate the fruit is soft and balanced by soft fine tannins.

Variety

Merlot is originally from the Bordeaux region of France where it is coupled to Cabernet Sauvignon in order to flesh out the blend. On its own it makes a rich, plump wine full of ripe berry flavours and soft tannins. It is generally well behaved in the vineyard, however spring is a nervous time as rain or windy weather easily spoils the flowering of this variety.

Winemaking

Picked when fully ripe and fermented in our old open fermenters with hand plunging. The ferment is monitored carefully so as to get all the colour without extracting too much firm tannin. The maturing wine picks up lovely rich spice and toast characters from 20 months in French oak, 10% new, before filtration and bottling.

Food Matching

Merlot is rightly popular because of its versatility with food, especially tomato-based dishes and lighter meats. It will pair well with a range of Italian dishes, especially tomato based ones and also responds very well to the earthy, savoury flavours in roast chicken, mushrooms and parmesan cheese.

Cellaring Potential

With its emphasis on bright fruit and soft tannin this wine is released with little bottle age and with current consumption in mind. It is recommended to be consumed relatively young, with short term cellaring of up to four years from vintage.
