The Wine

A limited blend exhibiting golden amber colours and typical cold leaf tea characters. The palate is luscious with malty toffee and vanilla flavours. Be seduced by the charms of this hedonistic dessert wine.

Originally thought to come from the Hungarian Tokai variety, it is now accepted that these wines are made from the Muscadelle grape, a white variety. The long, warm Autumn days in Rutherglen allow the fruit to ripen to the high Baume levels and raisining so essential for the style.

Muscadelle has been grown at All Saints Estate since the winery was established in 1864. The current vines were planted during 1962 and 1963. The fruit is handpicked and crushed to release the sweet, concentrated juice. Pre-fermentation cold soaking swells the shrivelled berries and extracts flavour from the skins. Minimal fermentation occurs prior to fortification to 18%. The wine is a blend of selected vintages, stored in large oak ovals in the "chook shed" and racked into bottle as required.

Food Matching

Sip with blue cheeses such as Stilton, or enjoy with cheese or cream based desserts such as tiramisu. Superb drizzled over sugar baked figs with marscapone cream.

Cellaring Potential

Fortified wines are aged in barrel and not intended for lengthy maturation in bottle. They should be consumed within 18 months of purchase to be enjoyed at their best.

"Deep mahogany with an olive rim; this is a whorl of toffee plus coffee grounds and freshly baked malt loaf studded with raisins, charred chicory and salted chocolate. Very complex, rich, smooth and slippery. Wonderfully fresh." Jane Faulkner, Halliday Wine Companion, August 2018
