The Range

These back vintage All Saints Estate wines are special wines that are carefully cellared deep inside the castle and released only when they are at their peak for your drinking pleasure.

The Wine

If sparkling red can ever be considered a truly serious wine, then this must be as close as it gets. Made from a blend of old Cabernet wines aged in a solera system, bottle fermented and aged on lees then disgorged and liqueured with old All Saints vintage port. The result is richly complex, full of cassis, cedar and leather with supple tannins. It also happens to be as pink and frothy as one of Dame Edna’s feather boas.

Variety

Sparkling Reds are an Australian speciality (just like the Dame!) and the most common variety used for this style is Shiraz, which makes for rich, fruity wines. Here at All Saints we have built a fine reputation for our sparkling Cabernet Sauvignon. The variety is well suited to sparkling, being tightly structured with good acid and tannin and great colour. As already mentioned, it makes for a more serious style of fizz.

Winemaking

We don’t confine solera techniques to our fortifieds; we also use them for sparkling wines. The base was made from a blend of Cabernet wines of different ages. It was bottle fermented, aged on lees then disgorged and liqueured with old All Saints vintage port.

 

Food Matching

Great as an aperitif at the start of a warming winters dinner and lovely on its own, curled up on the sofa in front of the fire. Enjoy it in the warmer months when the food calls for red but it just seems too hot to open a hefty table wine.
