This is a substantial wine as revealed by the heady aromas when the cork is pulled from the bottle, confirmed by the intensely dense purple hues of the wine in the glass. There are plenty of ripe berry fruit aromas enhanced by vanillin oak and an appealing earthiness. Fermentation and extended maturation in American oak barriques has given length and structure to the wine. The palate is well balanced with ripe berry fruit and the classically firm tannic Cabernet finish, matched by a generous dollop of new oak. It is a marriage, which works well with the rich fruit.

Variety This classic red variety must surely be considered the partner in popularity and status to the Chardonnay grape. Cabernet’s homeland is certainly Bordeaux - particular Medoc - where it is always part of the claret blend. It does however manage to reproduce its varietal character wherever it is planted throughout the world. Cabernet berries are thick skinned and small, which produces excellent colour, tannin and flavour intensity. The quintessential blackcurrant and cedarwood aromas and flavours combine with pencil shavings, tobacco and cigar box, mint and olives, and green pepper an herbacecousness (in cool climates) to make Cabernet Sauvignon strongly identifiable in varietal terms and enormously popular as a result.
