Marsanne responds well to ultra-modern techniques of cold fermentation in stainless steel. However, it can really shine when given minimalist, old style techniques such as hand harvesting and wild fermentation. In 2012 we encouraged fermentation in barrel by indigenous yeast then aged on the lees for 18 months.
We have done as little as possible in the final stages, minimising fining and filtration to present the wine in all its glory.

Not only a year older than the standard Marsanne, it has more complexity to both its texture and flavour; even more importantly, it has tremendous drive, length and persistence from its citrussy acidity; its honeysuckle/honey and toast characters are still in the bud, but will burst out around '16."
