The Range

These back vintage All Saints Estate wines are special wines that are carefully cellared deep inside the castle and released only when they are at their peak for your drinking pleasure.

The Wine

Our Marsanne has enticing aromas of pear and quince with layers of creamy texture and earthy, nutty flavours from oak and yeast lees.

Variety

Marsanne came from the Rhone Valley in Southern France, where it had languished, unloved, for many years. Finally the French are realising what we, in North East Victoria, have known for generations, that Marsanne is a wonderful variety. Our vines are over 50 years old, resulting in fruit of uncommonly intense flavour.

Winemaking

Marsanne responds well to ultra-modern techniques of cold fermentation in stainless steel.  However, it can really shine when given minimalist, old style techniques such as hand harvesting and wild fermentation. In 2012 we encouraged fermentation in barrel by indigenous yeast then aged on the lees for 18 months.

We have done as little as possible in the final stages, minimising fining and filtration to present the wine in all its glory. 

Food Matching

This is a richly flavoured wine with crisp acidity and subtle oak. As such it will be a perfect foil for winter favourites such as simply prepared Roasted Chicken with Root Vegetables.

Cellaring Potential

We have been making Family Cellar Marsanne since the 2003 vintage and all have shown the ability to age well. This 2012 Marsanne should also cellar well for at least 5-6 years, perhaps longer.

Not only a year older than the standard Marsanne, it has more complexity to both its texture and flavour; even more importantly, it has tremendous drive, length and persistence from its citrussy acidity; its honeysuckle/honey and toast characters are still in the bud, but will burst out around '16."
