The Range

These back vintage All Saints Estate wines are special wines that are carefully cellared deep inside the castle and released only when they are at their peak for your drinking pleasure.

The Wine

Named in honour of Peter Brown on the date of his 60th birthday, this wine now carries far more resonance for all who work or play here at All Saints Estate. This wine is a carefully crafted blend of the traditional French varieties, Cabernet Sauvignon (44%), Cabernet Franc (40%) and Merlot (16%). Each of these varieties brings something special to the blend: Cabernet Sauvignon the lovely berry flavours and fine tannins, the Cabernet Franc gives lifted floral notes and Merlot a rich mid-palate. It is a deep ruby colour with aromas of cassis, violets and mixed spice. The palate is firm with good tannins and fine acid balance, ideal for cellaring.

Variety

All these varieties make up (in varying proportions) the famous Clarets of the Bordeaux region. They flower, set and ripen at different times, which is a shrewd way of spreading risk and resources. As with all blends, the intention is to make something which is greater than the sum of the parts.

Winemaking

The varieties were all picked and fermented separately in the old open concrete tanks at the castle. They were hand plunged then gently pressed out in our old basket press, and aged for 22 months in a combination of new (28%) and older premium oak prior to blending and bottling. 

With its combination of fine tannins and great depth of fruit, this wine will benefit from a prolonged spell in bottle. It can be enjoyed now with all its lush and vibrant flavours, or laid down for up to a decade to develop greater complexity.

Food Matching

On release the wine will be great with all kinds of dishes; however the tannins are quite firm so avoid anything too spicy. Given a few years in bottle, the wine will be a perfect partner to roast beef.

Cellaring Potential

With its combination of fine tannins and great depth of fruit, this wine will benefit from a prolonged spell in bottle. It can be enjoyed now with all its lush and vibrant flavours, or laid down for up to a decade to develop greater complexity.

"A blend of cabernet sauvignon, merlot and cabernet franc first made '05 for patriarch Peter Brown to celebrate his 60th birthday; later that year he died in an accident, and this wine continues as a tribute by the family. The components are separately fermented in open concrete vats, hand-plunged and pressed in the 120-year-old basket press. It has excellent colour, and a truly impressive depth to its blackcurrant, redcurrant, plum and cedary oak, the tannins fine and ripe,
