The Range

These back vintage All Saints Estate wines are special wines that are carefully cellared deep inside the castle and released only when they are at their peak for your drinking pleasure.

The Wine

Hand plunged in small open fermenters and steeped on its skins for three weeks before gentle pressing. The result is an ink-black wine of tremendous intensity and power. It has rich flavours of berries and licorice with dense tannins and classy French and American oak. Built to last a generation, this is Rutherglen Durif as the classic “iron fist in a velvet glove”.

Variety

Durif is a cross between Shiraz and the almost unknown Peloursin variety. It was developed by a Dr Durif (such modesty those Frenchies) a little over 100 years ago. Intended for the warm, dry climes of Southern France, it is no surprise that the variety has flourished in Rutherglen.

Winemaking

Durif has huge colour and can be extremely tannic if not handled carefully.  So the technique of long maceration, where the skins are left soaking for weeks, would seem inappropriate at first.  However, given long enough, in this case 21 days, the tannins begin to soften and the structure of the wine is surprisingly supple when the time finally comes to press.  The wine then spent 20 months in barrel before bottling.

Food Matching

Young Durif is a wine of such concentration that it almost seems like a meal in itself! It needs to be partnered with rich dishes such as braised beef or steak and kidney pie. With time it will handle the most special of occasions and dishes, such as a roast rib of beef.

Cellaring Potential

There is no doubt that the best Durifs can last for decades in bottle. Durif has plenty of tannin and enough acidity to keep the wine balanced and improving for up to a decade or more. Within a few years it will throw some sediment, so is best decanted before serving.
