The Range

These back vintage All Saints Estate wines are special wines that are carefully cellared deep inside the castle and released only when they are at their peak for your drinking pleasure.

The Wine

Inky black, intensely flavoured and hugely powerful, this is a wine of superlatives. Made in the old North-Italian tradition of Ripasso, this is a very different kind of Shiraz to whatever you may have tried before. Along with its rich flavours and velvet tannins comes a hefty dollop of alcohol. So consume in moderation.

Variety

Shiraz is Australia’s favourite red grape and the one that we have truly made our own here in Rutherglen. Deep sandy soils and abundant autumn sunshine allow us to make distinctive reds that combine richness and great structure.

Winemaking

The RIP stands for Ripasso, an old winemaking trick from the North-Italian region of Valpolicella. In Italy some of the grapes are dried on trays in airy lofts for several months in order to concentrate their sugars and flavours. In the meantime other red table wines are made and fermented in the usual manner for the production of Valpolicella. After the drying process is complete the shriveled fruit is crushed and fermentation takes place. The resulting wine is called Amarone and can be either dry or semi sweet, but is always very intense. After this is done some producers take some of the normal Valpolicella red and pour it over the Amarone skins (which invariably have some remaining sweetness to them). Another short fermentation takes place to use up the remaining sugar and the skins and wine are pressed out one last time. The wine from this process is called Ripasso, which as you would expect comes from the technique of re-passing wine over the skins.

We made our Ripasso by passing some 2006 Shiraz over the skins of our 2007 Port.

Food Matching

There is no escaping that this is a huge wine. It goes beautifully with hard cheeses and rich dishes such as braised lamb shanks.

Cellaring Potential

The wine is incredibly flavoursome and highly alcoholic. Although it does not taste porty it shares that wine’s structure in lots of ways. It will probably last for many, many years.
